Artisanal bread proofing and baking oven

A smaller size oven (same/similar footprint as the Arden smoker), just big enough to hold two half-sheet pans one over the other, with precise temperature and humidity controls also in the lower temperatures (95°-115°F) to make it suitable for proofing and baking sourdough and other yeast breads. With precisely controlled convection heat and humidification it is possible to make perfectly crusty baguettes, soft and fluffy artisanal brioche bread rolls, and more. Set-it-and-forget-it programs could control everything from the proofing cycle through the baking process automatically. Perfect companion product for Doug the smart sourdough starter!
